Date Pistachio Muffin is sugar-free nutritious treat for all age. These muffins are full of dry fruits which contains high fibre and protein. These muffins are also good for the diabetics patient and very easy to make. They are nice and moist and flavorful topped with chopped pistachio. Ingredients For Date Pistachio Muffin:-
One And One-Fourth – Khaand(a sweetening agent and a healthier substitute of sugar)
One And A Half – Ragi Flour
One-Fourth Cup – Clarified Butter
Three-Fourth Cup – Whole Wheat Flour
Two Tablespoons – Corn Starch
Half Teaspoon – Salt
One And A Half Teaspoon – Cardamom(grounded)
Two Teaspoon – Baking Powder
Half Teaspoon – Baking Soda
One Cup – Buttermilk
Half Cup – Water
One Cup – Dates
One Cup – Pistachio
Preheat the oven to 180 degree Celcius.
Take your muffin tray and grease it with butter.
Mix the butter and khaand in a bowl, which will give a cream-like texture.
Add ragi flour, whole wheat flour, corn starch, grounded cardamom, baking powder, and baking soda to the mixture.
Now, add the buttermilk and water to the batter and mix it well until all the ingredients are blended properly.
Add chopped dates and pistachios to the batter.
Spoon them into the muffin tray and bake to perfection for twenty-five to thirty minutes. Sprinkle some pistachio on top of the muffins.
Serve with a hot cup of tea.
