Ingredients
  

INGREDIENTS FOR SEMOLINA CAKE / SUJI CAKE

  • 2 cups Semolina Suji/Rawa
  • ½ cup Butter (unsalted) for vegan use vegan butter
  • cup White Sugar can be adjusted as per sweetness
  • ½ cup All Purpose Flour Maida
  • 1 cup Milk Vegan milk can also be used, adjust the consistency
  • cup Milk for fermentation
  • 1 teaspoon Lemon Juice for fermentation
  • ½ cup oil
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • handful Pistachios Chopped, could be any dry fruits as per your choice

Instructions
 

STEPS FOR MAKING SEMOLINA CAKE / SUJI CAKE

  • Take a mixing bowl; add 2 cups of semolina to bowl.
  • Add 1 cup of milk to the semolina in bowl.
  • Now, mix well the above mixture. You can use spatula or hand mixture.
  • Furthermore, let the above mixture to rest for 30 minutes
  • Additionally, take another bowl. Add ½ cup of all purpose flour to it. Add 1 teaspoon baking powder and ½ teaspoon baking soda.
    Note: I am using strainer here for two reasons 1) to get rid of any mods in flour 2)to create volume in flour.
  • Next, Mix well the above dry mixture.
  • Take ⅓ cup of milk and add 1 teaspoon of lemon juice to it. And keep it aside.
    Note: This is for fermentation, you can also use buttermilk for this but I prefer making it instantly.
  • Now, after 30 minute of resting, bring back the semolina mixture. Mix it again with spatula.
  • Add ½ cup of oil to the mixture and 1 ½ sugar. Mix them well for 5 minute
  • Afterwards, add the dry mixture of all purpose flour to it & mix again.
  • Next, add the butter milk prepared to the above mixture but in small proportion and keep on mixing.
    Note: Buttermilk is added in small proportion progressively to have good fermentation.
  • At last when you finish, add some dry fruits to mixture and mix it for last time 🙂 Top it with some dry fruits.
  • Finally, Ahhh! you mixture is ready to go.
  • Grease the baking tray with oil and pour the mixture to tray.
  • Pre-heat oven and bake the cake for 40 mins at 180 ° Celsius Or 356 ° Fahrenheit.
    Note: You can also make it in Kadai/ sauce pan with lid, just grease the pan with oil and pour the mixture and cover it with lid. Cook it at low flame for 40 to 50 minute.
  • After 40 minutes are over take a tooth pick and check if its cooked properly, if not cooked leave it for next 10 minutes
    Note: Tooth pick or fork is used to check the cake. Simply you have to dig it in mixture and remove out. If its surface is clean it means its cooked. Be careful with hot surface. 🙂
  • After, its cooked remove the tray and allow it to cool.
  • Later, with help of knife separate the edges of cake from tray and invert it upside down on chopping board or any flat surface.
  • Your cake is ready. Enjoy it with loved ones.

How to Make Suji Cake / Semolina Cake

  • Note: This is for fermentation, you can also use buttermilk for this but I prefer making it instantly.
  • Now, after 30 minute of resting, bring back the semolina mixture. Mix it again with spatula.

  • Afterwards, add the dry mixture of all purpose flour to it & mix again.

  • Next, add the butter milk prepared to the above mixture but in small proportion and keep on mixing.
  • Note: Buttermilk is added in small proportion progressively to have good fermentation.

  • At last when you finish, add some dry fruits to mixture and mix it for last time 🙂 Top it with some dry fruits.
