Ingredients for making aloo masala puri

  • 2 cups Whole wheat flour
  • 1 cup Semolina (sooji)
  • 2 cups Potatoes (boiled and grated)
  • 1 tsp carom seeds (ajwain)
  • 1 tsp Cumin Seed (jeera)
  • 1 tsp Turmeric Powder (Haldi)
  • 1 tbsp Coriander leaves (chopped finely)
  • Salt as per taste
  • oil (to grease and fry)

How to make aloo masala puri

    How to make puri dough

    • Take a deep plate, add 2 cups of wheat flour, 1 cup semolina (sooji) and grated boiled potatoes.
    • Furthermore, add other spices like chopped coriander leaves, 1 table spoon of carom seeds (ajwain) and cumin seeds (jeera) each, salt as per taste to puri flour.
    • Now mix all ingredients along with the flour. Afterwards when the ingredients are mixed properly with the flour add some amount of water based on requirement of puri dough .
    • Likewise, now knead it till you get a soft surface.
    • Furthermore, grease the surface with oil and over with damp cloth.

    How to fry Alu masala Poori

    • Heat the oil in a deep pan on medium flame for frying puri.
    • Now to make alu poori take a small amount of dough, roll between your palm and give a ball like shape.
    • Likewise, roll this puri ball on base (chopping board) with the help of roller to give desired size.
      Tip: Use oil to grease meanwhile rolling, to avoid stickiness.
    • Afterwards, when your aloo puri is ready for frying check by below tip whether oil is hot enough or not.
      Tip: Put a pinched amount of dough in heated oil, if it is raised up in a few seconds then oil is read for frying. But if it doesn't , then wait for oil to become hot.
    • Put the prepared puri in hot oil and allow it to rise.
      Tip: Be careful while dealing with hot oil. Oil in a deep pan should be enough in amount so that puri is dipped completely inside.
    • After some a minute when puri is raised properly, with help of strainer flip the side. Allow the other side to be cooked.
    • Meanwhile, take a plate or large deep bowl with kitchen tissue or oil soaking tissue on it for keeping the fried puri.
      Tip: This will help to take extra oil off from the fried puri.
    • Repeat the above step until all the puri are fried.
      Tip: You can increase or decrease the oil flame in-between based on your requirement.
    • Serve the Aloo masala puri with paneer or any other sabji. You can also try raita as a side dish.

    Tips: 
    1. Be careful while dealing with hot oil.
    2. Use the tip to check the temperature whether suitable for the frying pan, this will be very helpful for making soft fluffy aloo puri.
    3. You can use Chopping board as a base while using a roller.
    4. Use the proper proportion as given above to get the same appearance and taste.
