  • 3 cups Potatoes (mashed)
  • 1 cup Zucchini (grated)
  • 1 cup Carrot (peeled and grated)
  • ¾ tablespoon Salt
  • ½ tablespoon Garlic Powder
  • 1 tablespoon Parsley (dried)
  • ¼ tablespoon Turmeric Powder (Haldi)
  • ¼ tablespoon Paprika
  • ½ cup Chickpea Flour

Instructions

How to make Potato Zucchini Fritters

  • Pre-heat the oven to 400° F.
  • Take potatoes and zucchini and grate it with the help of grater. Furthermore, take cheese cloth or paper towels to squeeze the liquid from the grated potatoes and zucchini.
  • Make sure to squeeze it well and remove the starch.
  • Take grated potatoes and zucchini add flour and spices to it and mix well
  • Take ⅓ cup of the mixture and make balls with the help of your palm or you can make it flat also.
  • Moreover, place them on the parchment paper, press and flatten same. Furthermore, bake the same for 20 minutes
  • Further, flip the fritters and bake them for another 15 minutes. Until turns golden and crisp edges.
  • Serve with ketchup, vegan sour cream, yogurt or chutney.
