Stuffed Tortilla can be made in different varieties depending on your favorite ingredients stuffed inside. Aloo paratha can be made in 2 different technique and is one of the most favorite recipe in India. It is made by boiled mashed potatoes flour aromatic Indian spices. Stuffed tortilla are very deliciously soft filled with yummy potatoes. Its one among the top tiffin recipes. It reminds me of my school days when I got surprisingly happy to find paratha in my recess time. Moreover, not only I but my friend circle also get crazy that time. 😛 that why i ask my mom to give me two tiffins if it’s aloo paratha/ stuffed tortilla. Stuffing come if many form like another famous paratha from Indian kitchens are Onion paratha, Gobhi (cauliflower paratha ), methi paratha, muli (raddish ) paratha & many more.
Furthermore, I heard from many that its difficult to make paratha, but here I gave two different technique. Choose the best which fits you. I recommend Technique 2 if you are very beginner. Also, you will find step by step pictures for both technique with tips and note.

Equipment Required
- Sauce Pan With Handle (non stick)
- Roller
Ingredients
lngredients for Tortilla
- 3 cups Wheat Flour
- 1 teaspoon Ajwain seeds (Optional Cumin seeds an be used alternatively)
- Salt (As per taste)
For the Stuffing
- 1½ cups Potatoes (boiled and mashed)
- 1 Tablespoon Coriander leaves (finely chopped)
- ½ Tablespoon Fresh Mint (finely chopped)
- ½ Teaspoon Green Chilli (optional)
- ½ Teaspoon Red chilli (optional)
- 1 Teaspoon coriander powder
- 1 Teaspoon Chat Masala (Dried mango powder is alternative)
- Salt (As per taste)
Other ingredients
- Whole wheat flour (for rolling )
- ghee (for greasing )
Instructions
How to make Tortillas Dough
- Combine the 3 cups of whole flour, 1 teaspoon Ajwain seeds/Trachyspermum ammi (cumin seeds alterantive) and salt in a bowl/ deep plate.
- Add small amount of water in middle of flour mix it well.
- Repeat the above steps until form final dough.Note: Don't add much water at once, keep on adding small amount after mixing until no more water needed.
How to make stuffing for Tortillas
- Boil the potatoes and allow it to cool. Once its cooled, peel it completely.
- Take a bowl, add the boiled potatoes and mash it with help of potato masher.
- Add salt, 1 Teaspoon of coriander powder, ½ teaspoon chilli.
- Add ½ Teaspoon chopped green chilli, cumin seeds and chopped coriander leaves and mint leaves.
- Mix all the ingredients well. Note: Make sure no big pieces of potatoes are left.
- Keep it aside.
How to make Stuffed Tortilla / Aloo paratha
- Head the non stick pan on low flame.
- Collect all the ingredients and mixture needed for stuffed tortilla/ Aloo paratha.
Technique 1
- Pull handful amount of dough and make small balls by using your palm.
- Now, take dust some flour and the balls into small circles.Note: You can use chopping board if you don't have base.
- Dust some more flour on both side if its sticky while rolling.
- After the circle is complete as shown in picture.Note: shouldn't be too big or too thin for filling.
- Place the tortilla on your hand and make it deep in your palm as shown in picture.
- Add some stuffed potato filling with help of spoon.Note: Filling should not be too much or too less. Just exact to fit inside the tortilla (preferably 1 medium spoon of filling).
- Press the filling in center and start pinching the edges of tortilla to close the stuffing inside.Tips: It same as momos . Adequate amount of filling is necessary for proper closing.
- After it is closed from all side its looks alike in picture. Make sure its tightly closed else it will spill out on rolling.
- Now place the filled ball on base and press it with fingers to spread the fillings inside smoothly.
- In picture, you can see the filled ball is initially spread with help of finger and flour to prevent filling from breaking out.
- Later, dust some flour on both side and with help of roller spread it.Note: this is very delicate step, after filling you can only spread it without putting any pressure on roller. just move roller softly without any pressure.
- You can see the fillings are visible on tortilla surface but its not broken.
Technique 2
- Pull handful amount of dough and make small balls by using your palm.Note: Ball size in technique 2 is small then in technique 1.
- Now, take dust some flour and the balls into circles.
- Repeat the step above, as result you have now two tortilla of same size.
- Take one of two tortilla, place it and spread the fillings. Make sure you leave 1 centimeter gap from edges. Note: Filling should not be too much or too less. Just exact to fit inside the tortilla (preferably 1 medium spoon of filling).
- Now spread some water on the gap left on edges.Note: This will help both the tortilla to stick properly
- Place the second tortilla over this and press the edges with finger or fork for strong grip.
- This is most easy way if you are beginner, although takes much time and efforts as compare to Technique 1.
How to make Stuffed Tortilla/ Aloo Paratha
- Now place it on Pan and allow to get golden brown.
- In order to check, lift the tortilla with help of knife or spoon to check if its lightly golden onside.
- Once its lightly golden flip it to other side and allow to cook.
- Grease some ghee/butter or oil on cooked side with brush or spoon.
- Once it cooked from other side too grease some ghee/butter or oil and keep it aside on kitchen tissue.
- You can see both tortilla in picture cooked with technique 1 (left) and technique 2 (right).
Notes
- Potatoes should be mashed finely for smooth and better finish.
- Technique 2 is for beginner as it is easy compare to Technique 1.
- Fillings could be any of your choice just make sure the fine the better.
- For tortilla dough, its okay if you added more water while preparing dough. Could be fixed by adding flour.
- Recommended to add water in small amount each time progressively.
