Delicious Malpua Recipe

INGREDIENTS

  • 200 gm all purpose flour [Maida]
  • 1 teaspoon fennel seeds [Sauf]
  • 1 teaspoon powdered green cardamom [Hari Elaichi]
  • 1 cup ghee
  • 250 gm sugar
  • 1 pinch saffron [Kesar]
  • 100 gm semolina [Suji]
  • 1/2 teaspoon baking powder
  • 500 ml milk
  • 2 tablespoon chopped pistachios [Pista]
  • 250 ml water
  • 50 gm khoya

DIRECTION

Step 1

Prepare sugar syrup first & keep it aside. Heat water with sugar in a pan. Stir the mix until sugar dissolves completely.

Step 2

Next, add 3 tsp of milk and continue to stir again. Don’t forget to remove the scum that appears on the edges of the pan.

Step 3

Remove the syrup from the pan when is consistency is thick.

Step 4

Add all-purpose flour, semolina, khoya, baking powder, fennel seeds, cardamom powder and milk together in a bowl. The batter must have pouring consistency. It should not be too thick or too thin.

Step 5

Now heat ghee in a pan on slow flame. Pour the mixture with the help of a ladle & spread evenly.

Step 6

Fry the malpua on slow flame until the color changes to light brown on both the sides.

Step 7

Soak the malpua in sugar syrup for 10 minutes.

Step 8

Lay on the plate & garnish it with dry fruits & pomegranate.

Chocolate Gujiya

Chocolate Gujiya – Pastry Stuffed With Yummy Choclate

Ingredients For Gujiya:-

  • 4 cups refined flour
  • 5 tablespoon+ ghee for deep frying
  • 500 gms khoya
  • 31/4 cup desiccated coconut
  • chopped dry fruits
  • 1/4 teaspoon green cardomom powder
  • A pinch of nutmeg powder
  • 21/2 cups powdered sugar
  • 1/ cup grated chocolate

Directions For Gujiya:-

Step 1

Knead dough of refined flour with cold water. Add ghee to the flour before kneading.

Step 2

Cover the dough with a cloth.

Step 3

Saute khoya in a pan for two minutes.

Step 4

Let the khoya cool for a second.

Step 5

Add desiccated coconut & chopped dry fruits to the khoya.

Step 6

Add green cardomom & nutmeg powder to the mixture.

Step 7

Add powdered sugar to the mixture.

Step 8

Add grated chocolate at the end & mix the stuffing well.

Step 9

Roll small puri of dough.

Step 10

Place the stuffing on half side & cover it.

Step 11

Seal the corners.

Step 12

Deep fry in medium heat.

Step 13

Gujiya is ready to serve.

Pineapple Gujiya – Gujiya With A Twist Of Fruit

Ingredients For Pineapple Gujiya:-

  • 2 cups refined Flour
  • 3 tablespoons of Ghee
  • 1 cup Pineapple
  • 4 tablespoon Grated Coconut, Sugar, And Khoya
  • Ghee for frying

Directions:-

Step 1

Add ghee to the refined flour & knead a tight dough with cold water.

Step 2

Cover the dough with a cloth to keep it moist.

Step 3

Saute pineapple for a minute & add raisins into the pan. Stir the mixture till it gets dry.

Step 4

Add desiccated coconut to the mixture.

Step 5

Mix sugar into the pan & turn off the heat. Let it cool down a bit.

Step 6

Add Khoya to the mixture & mix it well.

Step 7

Roll out small puris of the dough & place the stuffing on the half.

Step 8

Cover the other half on the stuffing & seal the dough by pressing the corners with a fork.

Step 9

Deep fry the Gujiya on low heat in ghee.

Step 10

Remove the gujiyas on absorbent paper.

Step 11

Roll small puri of dough.

Step 12

Place the stuffing on half side & cover it.

Step 13

Seal the corners.

Step 14

Deep fry in medium heat.

Step 15

Ready to serve.
