- Meatballs:
- 1 pound beef
- 1 pound ground pork
- 2/3 cup milk
- 3 slices of white bread, remove sides
- 1/4 cup ricotta cheese
- 1/4 cup grated parmesan cheese
- 2 eggs
- 2 tsp Kosher salt
- 1 tbsp chopped fresh parsley
- 2 tbsp black pepper
- 1 tbsp dried oregano
- 2-3 garlic cloves
- About 1 cup of flour for dusting
- 1/3 cup olive oil
- 2 1/2 cups of tomato sauce
Tomato Sauce:
- 2 tbsp olive oil
- 3/4 cup finely chopped onions
- 3/4 cup finely chopped carrots
- 3/4 cup finely chopped celery
- 2 tbsp chopped fresh parsley
- 1 clove garlic
- 28 whole tomatoes, [Peeled and chopped]
- 1/2 tsp dried basil
- 1 teaspoon tomato paste
- Salt & black pepper to taste
