Chicken dim sum is a staple Chinese recipe. To point out one of the interesting things about dim sum is that they are really healthy. Chicken Dim Sums can be served as a vegetarian appetiser as well as a non-vegetarian alternative with a chicken or pork filling. Today I am going to show you how to make authentic Chicken Dim Sums with Schezwan sauce to go with it. Chicken dim sum is amazing party finger food. It is easy to make and healthy to eat. However, the Chinese recipe I am going to share with you is authentic and might require a few Asian ingredients. Have you ever wondered what is the difference between a Dim Sum with chicken filling and Chicken dumplings? No, they are not the same. I am going to explain the key difference between these two as well.

As I have noted, there are various recipes and alternative versions of making chicken dim Sum. For e.g., American recipes, desi Indian recipes and authentic Chinese recipes tuned to our liking. To note, Schezwan sauce is a delicious condiment to accompany dim sums. It highlights the flavour and texture of the dim sum and adds some spice. You can also use store-bought Schezwan sauce, but I will tell you how to make one at home.

Little History about Schezwan Sauce and Chicken Dim Sum

According to Wikipedia, Schezwan sauce or Schezwan cuisine originated from the Sichuan province of china. This sauce uses a lot of garlic and peppers hence, it has a bold flavour. However, this condiment can be used as a side for other Chinese recipes as well like chilli paneer. Moreover, I will attach the link to the recipe as well. There are over a thousand variations of Dim Sum and most of them originated from the Guangdong province of China.

Now, let us jump to the recipe!

Equipment Required

  • 1 Steamer

Ingredients

For making the Dim Sum wrapper

  • 1 cup All purpose flour
  • cup Water
  • 1 tbsp oil
  • Pinch Salt

For making the chicken filling

  • 250 grams Chicken
  • 3-4 cloves Garlic (Finley chopped )
  • 1 Carrot (Finley chopped )
  • 1 tbsp Light soy sauce
  • ½ tbsp Salt (Add to taste )
  • ½ tbsp Pepper (Add to taste )

For making the Schezwan sauce

  • 2 cups Dried chilli
  • ¼ cup Oil
  • 4-5 cloves Garlic (Finely chopped)
  • ¼ cup Ginger (Finely chopped )
  • 2 tbsp vinegar
  • 1 tbsp Soy sauce
  • ½ tbsp Salt
  • 2 tbsp Tomato sauce
  • 1 tbsp Sugar

Instructions

To make the Dim sum wrapper

  • To make the dough, In a bowl mix the flour, oil and salt. Now add boiling water gradually and start mixing it with a no stick spatula.
  • After the dough is cold enough, knead it with the hand until it is soft.
  • Cover it with a damp towel and let it rest.

To make the chicken filling

  • Add chicken mince, chopped carrots, minced garlic and chopped green onion in a bowl and mix them together. Season with soy sauce, salt and black pepper to taste.
  • Now, to make the Dim Sum take a little dough, and flatten it using a rolling pin. Make sure that the wrapper is thin enough.
  • After you flatten the dough, Add about ½ tbsp of the filling and shape the dim sum by pinching the ends together.
  • Now, Steam them for about 15 minutes.

To make the schezwan sauce

  • Take the dry chillies and cut off the top and add it to hot water. Let it rest in the water for 20 minutes.
  • After 20 minutes, take the chillies out and of the water and blend them into a smooth paste.
  • Now, take a pan and add some oil.
  • Add chopped garlic and 2 tbsp ginger and let it fry for a minute for furthermore, add the red chilli paste and saute for 2 minutes until chilli gets cooked well.
  • Next, add some water and let it simmer until the oil floats on top.
  • Furthermore add in ½ tsp pepper, 2 tbsp vinegar, 2 tbsp soy sauce, 2 tbsp tomato sauce, 1 tbsp sugar and salt to taste.
  • The Schezwan sauce is ready! Serve the hot and steaming Dim Sum with chicken filling and this delicious sauce to enjoy!
  • Top the Dim Sum with spring onion when serving.

To Make Chicken Dim Sum with Schezwan Sauce

Equipment Required

  • 1 tablespoon oil
  • Pinch Salt

Difference between Chicken Dim Sum and Chicken Dumpling

According to Differencebetween, The key difference between a dim sum and a dumpling is that a dim sum can be made with any flour and any filling. Whereas, a dumpling can be made with only all-purpose flour, bread or potatoes. However, there are over 1000 variations to both dumplings and dim sums. Moreover, Dumplings alone are made in 50 different ways in India. One more pressing difference to be addressed is that dim sums are always made with a filling whereas dumplings can be made without a filling. However, dim sum is not made with a dough that is as flavourful as a dumpling. Dim sum is smaller in size compared to a dumpling.

  • The key to making a good dim sum dough is to add hot water to the dough. As shown above, you can continue to knead the dough with your hand after the dough is a little cold.
  • As I said earlier, it is important to soak the red chillies in hot water before blending. As a matter of fact, you can let it soak for 30 minutes.
  • Garnish the Dim Sum with green onions for added taste.
  • Although you can use store-bought schezwan sauce, I strongly recommend making your own sauce.
