Mango curry is an interesting curry recipe with raw mangoes Mangoes. which gives this recipe a sour flavor additional of sugar make the balance of sweet and sour and spices make the curry spicy. All three flavor in mango curry left anybody mouth watering. Hope you like this recipe as you did like my previous recipe Smoothie Recipes.
Two And A Half Tablespoons – Vegetable Oil
One Teaspoon – Black Mustard Seeds
One – Onion(finely chopped)
Ten – Curry Leaves
Four – Garlic Cloves, Finely Chopped
Four Inch Of Ginger Piece, Finely Chopped
One Green Chilli, Finely Chopped
Two Teaspoon- Curry Powder
One Teaspoon – Turmeric Powder
One Teaspoon – Chilli Powder
Four – Green Mangoes, Sliced Into Wedges
Three – Cardamon Pods
Two – Cinnamon Sticks
Two Tablespoon – Brown Sugar
200 ML – Coconut Milk
Coriander For Garnish
Salt And Pepper As Required
Heat oil in a saucepan over medium heat.
Add mustard seeds and stir for thirty seconds until they begin to pop.
Add onion, curry leaves, chopped garlic, chopped ginger, and chopped green chilli, and cook, stirring in between for few minutes or until fragrant and light golden
Reduce heat to low, add curry powder, turmeric powder, and chilli powder, and cook for thirty seconds.
Now add green mangoes, cardamon, cinnamon, and sugar, and stir to coat the mangoes.
Add two cups of water and cook until mangoes begin to soften.
Put the lid.
Remove the lid and simmer for for few more minutes or mangoes is just tender without losing its shape.
Stir through coconut milk, then simmer for further two minutes.
Season with salt and pepper.
Garnish with coriander leaves.
Serve with steamed rice.
