Saffron Semolina Pudding

Saffron Semolina Pudding is a sweet dish made with semolina, milk, and sugar served with dry fruits, and aromatic cardamom powder, adding saffron powder gives the pudding a nice orange color. Also Saffron Semolina Pudding is easy to cook in less time. Hope you like this recipe as u did like my previous recipe Potato Rolls Stuffed With Spinach And Tofu.

Ingredients for Saffron Semolina Pudding

  • One Tablespoon – cashew nuts
  • One Tablespoon – Raisins
  • One and a Half  Cup – Semolina
  • 500 ML- Boiling Milk
  • One Fourth Teaspoon – Saffron Powder
  • Five Cups – Caster Sugar
  • One Teaspoon – Ghee(Clarified Butter)
  • One Fourth Teaspoon – Cardamom(grounded)
  • Butter to Grease

Directions for Saffron Semolina Pudding

  1. In a medium frying pan dry-roast the cashew nuts until golden brown over a low heat. Keep aside.
  2. In the same pan, dry-roast the raisins until start to turn golden and plump. Put the raisins together with the roasted cashews.
  3. Again in the same pan, dry-roast the semolina. As the semolina started to turn golden add the boiling milk and saffron powder. Cook for ten to twelve minutes, until the semolina becomes soft and the milk absorbed, stir continuously.
  4. Add the castor sugar, mix well and cook for five more minutes with continuously stirring. After that add the ghee and cook for a further 3-4 minutes.
  5. Add the cardamom, cashews, and the raisins and give it a nice stir.
  6. Now take a round cake tin, grease it with some butter, pour the semolina in and spread it to a thickness of a cake.
  7. Cut into square shape, or you can serve it as it is without using cake tin.

As an Ayurvedic medicine, it was used as an expectorant, sedative, anti-asthma, adaptogen, emmenegogue and in various Opioid preparations for pain relief. The dried stigmas hold great importance in the production of cosmetics, pharmaceutics, and textile-dye industries, along with cooking.
