Generally, biryani is widely made with chicken or mutton. However, today I am going to show you a vegan alternative to this famous delicious dish. We are going to use jackfruit as an alternative to meat options like chicken or mutton. As vegan culture is increasing there are wider alternatives to this mouth-watering dish. Kathal or Jackfruit Biryani

Ingredients

  • 1 ½ cups basmati rice
  • water (as required )
  • 2 pods cardamon
  • 1 inch cinnamon
  • 2-3 cloves
  • 1 bay leaf
  • salt (to taste)
  • 400 grams jackfruit
  • 1 cup yoghurt
  • ½ tsp turmeric
  • ½ tsp chilli powder
  • 1 star anise
  • 3 pods cardamom
  • 1 inch cinnamon
  • 2 cloves
  • 2 onions (thinly sliced)
  • 1 tomato (thinly chopped)
  • mint leaves
  • coriander leaves
  • ginger garlic paste
  • green chilli paste
  • salt (to taste )
  • 2-3 tsp ghee
  • 3 tbsp milk
  • saffron (optional )

Instructions

For making the rice

  • Take the basmati rice into a large bowl and rinse it properly.
  • Later, soak the rice for half an hour.
  • Take a pot and pour 4 cups of water rand bring it to a boil, add cardamon, cinnamon, cloves and also bay leaves to the pot. Bring it to a boil.
  • Next, add the socked rice and cook it until it is 80% done.

For making the Kathal curry

  • Firstly, take a pot and heat the some ghee.
  • Later, add all the whole spices – mace, star anise, cinnamon, cloves, and also cardamom. Saute for some seconds till fragrant.
  • Next, Add the sliced onions and fry them till they begun to get caramelized or golden.
  • When the onions begin to get golden, remove half of the onions keep them aside.
  • Next, add ginger, garlic and green chili paste. Saute for a few seconds till the raw aroma goes away.
  • Then add the tomatoes, mint leaves and coriander leaves. Saute for 1 to 2 mins until the tomatoes are cooked.
  • Add both the spice powders – red chili powder and turmeric powder
  • Add the chopped jackfruit. Stir and saute for 7 to 8 mins. Then add the yogurt
  • Stir and add water. Add salt and cover the pot with its lid.Cook until the jackfruit is cooked properly
  • Also soak saffron in warm milk and keep aside.

For making the biryani

  • In the same dutch oven or pot, on top of the jackfruit gravy, add half of the fried onions.
  • Now, Spread a second layer of rice. Add all the rice in this layer.
  • Next, sprinkle the saffron flavored milk along with the saffron threads, rose water or kewra water on the rice. Also dot with ghee.
  • Later, heat a tava or griddle. When the tava becomes hot, lower the flame. Place a moist kitchen napkin or towel on the pot covering it. Then place the lid tightly. The moist napkin or towel should not touch the biryani. Keep the pot on the tava and dum cook for 25 to 30 mins on a low flame.
  • Enjoy the delicious jackfruit biryani with some mirchi ka salan and raita.

Tips and conclusion

If you do not know how to chop a jackfruit, don’t worry, I got you. Follow these steps to properly prepare the jackfruit for cooking. First, apply oil to your palms, knife and chopping board. Chop the whole jackfruit diagonally first. Then separate the jackfruit from the husk. Add the jackfruit immediately to a bowl of water so that they do not turn dark. However, if you do not want to go through this heavy process of cutting the jackfruit you can also buy already cut kathal from any supermarket. if you are buying a whole jackfruit, make sure that you buy a ripe one and not a raw one. Also, keep In mind that the unripe jackfruit may not taste the same as a ripe one. This may create some problems with the texture and also the taste of the vegan meat.
