Vegetable Cake

Vegetable Cake is very delicious, fresh, and healthy alternative to the traditional cakes. There are plenty of vegetables and a great way to use leftover vegetables. Hope you like this recipe as you did like my previous recipe Rice Bread.

Ingredients

  • Two Cups – Fresh Broccoli(roughly chopped), Grits, and Boiling Water
  • One Cup – Roasted Peanuts(roughly chopped)
  • Half Cup – Carrots(diced), Red Bell Peppers(Diced), Yellow Bell Peppers(diced), And Orange Bell Peppers(diced)
  • Four Cloves – Garlic(finely chopped)
  • Half Small – onion(finely chopped)
  • 2 1/2 Tablespoon – Olive Oil
  • Salt To Taste
  • One Teaspoon – Curry Powder
  • Fresh Lemon Juice

Directions

  1. Take Broccoli, carrots, and bell peppers and heat in a small frying pan until soften.
  2. In an another frying pan heat oil over high flame.
  3. Put onion and garlic, cook until lightly brown.
  4. Add grits and curry powder, mix together for 30 seconds.
  5. Now add two cups of boiling water and all vegetables. Reduce heat to medium flame and cook until all the has been absorbed.
  6. Peanuts, salt, and pepper should be added here. Combine throughly.
  7. Apply half Tablespoon olive oil to inside of 8″ Bowl. Transfer cooked grits to it and pack evenly with a spatula.
  8. Let the cake cool. Use a butter knife to loosen cake from sides of bowl.
  9. Then flip over onto a platter.
  10. With a drizzle of freshly squeezed lemon juice on top the  vegetable cake is ready to serve.
