Spaghetti Arrabbiata – Italian Pasta with Diced Chicken

Spaghetti arrabbiata is a classic red sauce Italian pasta recipe made with tomato sauce, thin pasta and diced chicken (optional). However, it is a widely eaten as main course. Spaghetti arrabbiata is a dish that originated in Roam, Italy. As a matter of fact, Italy is a country known for its wide variety of pasta. According to Wikipedia, the word penne literally translates to “feather”. Penne Is a unique cylindrical pasta. Equally popular, the next type of pasta that I would like to mention is fusilli pasta. Although, It is a twisted pasta, it has a unique and fun shape to it. At the same time, another popular pasta that is widely used is macaroni. Everyone has eaten Mac and Cheese at least once in their life. In the meantime, If not, You should defiantly give it a try.

Equipment Required

Ingredients

For making the spaghetti

  • 2 cups flour
  • ½ tbsp salt
  • 4 tbsp oil (preferably olive oil )
  • 3 eggs

For making the red sauce

  • ½ cup chopped onions
  • 1 cup chopped tomatoes
  • ½ cup water
  • 4-5 cloves garlic
  • 2 tbsp oil
  • 2 tbsp chilli flakes
  • ½ tbsp salt (Add to taste )

For making spaghetti arrabbiata

  • 1 tbsp oil (preferably olive oil )
  • 250 grams diced chicken

Instructions

For making the spaghetti

  • Initially, you will be needing a bowl to make knead the dough or you can do it on a clean kitchen counter top. First, take the flour add ½ tbsp of salt and whisk it well.
  • Then, add 3 eggs and knead the mixture into a dough. use flour to coat the surface of the counter top to avoid sticking.
  • After the dough is made, let it rest for minimum of 30 minutes or you can leave it for 24 hours. More the better.
  • Now take the dough and divide it into medium sized parts. Now, flatten it using a rolling pin. If you have a spaghetti maker you can use it to flatten your dough into a thin sheet. if not, you can roll it using a rolling pin.
  • After the dough is flat, cut it into thin slices (though it is not called spaghetti now, we can still make delicious red sauce pasta with it) or add it to the spaghetti maker to get thin long pasta.
  • Next, refrigerate the pasta for 20 minutes.
  • Now, Take a pot and add 5 cups of water to it. next add pinch of salt and 2 tbsp of oil to it. next, add in your pasta and cook it until its Al Dante. or you can try to squish it with your hand and it if it is cooked properly.
  • Now strain the cooked pasta and follow the next steps!

For making the red sauce

  • First, Take a pan, add 1 tbsp of oil, ½ cup of onions, 2 tbsp of chilli flakes and chopped garlic cloves to it. fry the onions until they are golden brown.
  • Now, add the tomatoes and cook them until they are done and nicely crushed.
  • Next, add some salt to taste and use an hand blender to blend. of you like the texture of the sauce as it is, you can skip this step.

For making spaghetti arrabbiata

  • Now, Take a pan and add 1 tbsp of oil to it.
  • Next, add the diced chicken and fry it until it is golden brown. season it with salt and paprika as per your preference.

Assembly

  • Take the cooked pasta into a bowl, add the red sauce on top of it and then some diced chicken to it. You can top it off with extra virgin olive oil.

Conclusion and tips for making spaghetti arrabbiata

It is important to note that though there are many types of pasta you can make this with, only a few of them blend well. For instance, using macaroni with red tomato sauce may not be great. I suggest you use penne or fusilli pasta if you do not like spaghetti. However, you can use canned tomatoes if you do not want to use fresh tomatoes. On one hand, fresh tomatoes can give you a different flavour than canned tomatoes. I strongly suggest you use fresh tomatoes. You can store the sauce in an airtight container and put it in the refrigerator to use later. However, the freshly made sauce has a different flavour to it.

When making the pasta, do not forget to add oil to the water or else your pasta might stick to the pot. always season the pasta with a pinch of salt.
