Fried Aubergine – Crispy Outside Soft Inside

Fried aubergine is easy and quick recipe marinated with spices and serve as a side dish. Simple yet delicious recipe fried in oil till they turn crispy and golden. Hope you like this recipe as you did like my previous recipe Bitter Gourd Curry.

Ingredients For Fried Aubergine:-

  • One – Large Aubergine
  • One Teaspoon – Red Chili Powder
  • Half Teaspoon Each Of – Turmeric Powder, And Garam Masala Powder
  • A Pinch Of Asafoetida
  • Salt As Required
  • Five Tablespoons – Gram Flour
  • Six Tablespoons – Oil


  1. Rinse and slice the aubergine into round and medium thickness.
  2. In a large bowl take enough water, add half teaspoon salt and mix.
  3. Soak the slices for about ten minutes.
  4. Drain all the water and take the slices on a large plate.
  5. Sprinkle half teaspoon turmeric powder, half teaspoon garam masala, one teaspoon red chili powder and a pinch of asafoetida. And some salt as per taste.
  6. Mix and coat the spices evenly all over the slices.
  7. Take four tablespoons of gram flour in another plate or tray.
  8. Also, heat two tablespoons of oil in a frying pan.
  9. Take each slice of aubergine and place it on the gram flour.
  10. Evenly coat the aubergine slices with the gram flour. Dust the extra gram flour by tapping the slice.
  11. Place the aubergine slices in the frying pan.
  12. Fry the slices on medium heat. As one side become crisp and light golden then turn over and fry the other side of the slice till it becomes crisp and light golden.
  13. Flip a couple of times more for even frying.
  14. This way fry all the aubergine slices in two to three batches. Add some more oil as required.
  15. Remove the fried slices and place them on kitchen paper towels.
  16. Serve fried aubergine hot or warm as you want as a side dish with rice-lentil.
