It is a really flavourful way to recycle food without wasting it. You can always use the leftover meat from barbecues or even roasted meat to turn them into tortilla-wrapped delights.

Authentic Mexican tacos are not as spicy but you can always add more spice to them as per your preference. If you want to make tacos a little bit spicier, add more paprika to the filling. This will make the overall tacos spicy. You can also add jalapeños if you wish to make them spicy.

Generally, tacos are made with tortilla. However, you can also use leftover rotis to make tacos. Though they won’t have the same texture, it is a good way to reduce food waste. You can also use leftover naan or any type of Indian bread to make tacos.

How should I heat up my tortillas?

If you’ve got a gas burner, turn it to medium-low and place your tortillas directly on the burner. Let toast a few seconds (you can always peek using some tongs) flip, and toast some more. Not only will this give your tortillas some nice smoky flavour, it’ll also make them more pliable. Never walk away from the stove when you’re toasting tortillas on an open flame, no one wants to deal with a flaming tortilla!

Can I marinade these assorted tacos/tortillas?

Absolutely! Add sliced chicken to a large resealable bag and pour in olive oil, fresh lime juice, chilli powder, cumin, garlic powder, paprika, cayenne, salt, and pepper. Refrigerate the chicken for at least 30 minutes. When ready to cook, remove the chicken from the marinade and heat a little more oil in a skillet. Add the chicken and cook until cooked through!

Ingredients

Fish Tacos

  • 3 tbsp oil
  • 2 tsp chilli powder
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ½ tsp cayenne pepper
  • lb cod or salmon
  • salt (to taste)
  • ¼ tsp black pepper
  • 8 tortillas
  • 1 avocado (diced or smashed )
  • 1 lime (cut into wedges )
  • ½ cup sour cream

For the salad filling

  • ¼ cup mayonnaise
  • 1 lime (juice )
  • 2 tbsp freshly chopped coriander leaves
  • 1 tsp honey
  • 1 cup shredded cabbage (preferably purple cabbage )
  • ½ cup corn kernels
  • 1 jalapeno (minced )

Chicken Taco

  • oil
  • 1 cup skinless chicken (or leftover chicken )
  • 1 tsp black pepper powder
  • 2 tsp chilli powder
  • 2 tsp ground cumin
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • ¼ tsp cayenne pepper
  • 8 tortilla

Instructions

Fish Tacos

  • Firstly, In a medium shallow bowl, whisk together olive oil, lime juice, paprika, chili powder, cumin, and also some cayenne.
  • Then, add some cod, tossing until evenly coated. Let marinate 15 minutes.
  • Meanwhile, in a large bowl, whisk together mayonnaise, lime juice, cilantro, and honey. Stir in cabbage, corn, and also some jalapeño. Season with salt and pepper.
  • In a large nonstick skillet over medium-high heat, heat vegetable oil. Remove cod from marinade and season both sides of each filet with salt and pepper. Add fish flesh side-down. Cook until opaque and cooked through, 3 to 5 minutes per side. Let rest 5 minutes before flaking with a fork.
  • Then serve fish over grilled tortillas with corn slaw and avocado. Squeeze lime juice on top and garnish with sour cream.

Chicken Tacos

  • Firstly, In a large skillet over medium heat, heat oil. Season chicken with salt and pepper and add to skillet. Cook until golden, 6 minutes. Add spices and stir until coated, 1 minute more. If needed, add a little more oil or water to help spices coat chicken. 
  • Then assemble the tacos by adding the salad and some sour cream.
  • Serve these delicious tacos with a lime wedge.
