Ingredients

  • 100 g Fresh cheese (double cream stage)
  • 100 g Butter
  • 150 g flour
  • 50 g ground hazelnuts
  • 50 g Sugar
  • 50 g brown sugar

Instructions

  • First we prepare the super fast dough. For this, you give the fresh cheese, the butter and the flour in a stirred bowl. Then you only have to mix the ingredients with a kitchen machine to a uniform dough. You’re best to take kneading hooks. The dough is now covered in the refrigerator for 1 – 2 hours so that it can be processed better. But you can continue to process it for trouble even without rest.
  • Before you roll the dough, you mix the two sugars with the ground hazelnuts. Half of the mixture now comes to your clean work area. Then you also take half of the dough and give it as a ball to the sugar-nut mixture. Now you only have to roll out the dough round and flat and turn it over and over again so that the mixture from both sides remains really nice to the dough. Next, you cut the dough like a pizza into 8 equal parts and then roll the pieces from the big side to the top closely. The whole thing you do now with the other half of the ingredients.
  • If you have done this, you can bend the horns like a little croissant at both ends. After that, you put it down with the tip on a baking sheet with baking paper. Thus, the role in baking cannot stop and the ears remain in their shape.
  • The walnuts now come into the oven for about 25 minutes at 160° C. circulating air (over/underheat about 180° C.). Please look at the nuts again and again, because depending on the oven they need a little less or more time until they are crispy brown.
  • And finished are the super tasty hazelnut cookies that you can eat with coffee as pastries for Christmas.
