Equipment Required

Ingredients

  • Pasta
  • 250 g flour
  • 10 g Sugar
  • 15 g Yeast
  • 30 g Milk
  • 100 ml warm water
  • 45 g Butter
  • 1/2 Egg
  • 3/4 TL
  • Salt
  • Topping
  • 1/2 Egg
  • 1 EL Milk
  • 1 EL Water
  • Sesame (approx. 5 g)

Instructions

  • First you pour warm water together with milk and sugar into a large bowl. That’s where you crumble the fresh yeast. The mixture is stirred briefly and allowed to stand for 5 minutes.
  • Then add the flour and the salt. In addition, you stir the egg and give about half of it to the dough. The remaining egg is best placed in the refrigerator, because we need it later.
  • Finally, the soft butter is added. You can heat them briefly in the microwave or let them melt in the pot.
  • Now you knead all the ingredients into a uniform dough, which should feel slightly sticky but still firm. The dough must now go in a warm place, for example on heating or in the sun, covered with a towel for 1 hour.
  • After that it is nicely fluffy and clearly larger in volume .You can cover your work surface with transparent film so that the dough cannot stick. Then you’ll break the dough and take it carefully in shape, so that it stays nicely airy.
  • Now you divide the dough into 6 equal parts, which should weigh about 80 g. If you want to make big burger rolls, then the dough is enough for 4 rolls, which should weigh 120 g each.
  • Now you’re processing every bun into a small ball. For this purpose, the outer edge of the dough is drawn continuously inward until the dough becomes firmer and a ball is formed. This will bring you in shape again. The dough pieces then arrive at a distance between one another on a baking sheet with baking paper.
  • The rolls have to go covered again for 1 hour. In the meantime, I’ve pressed them a little bit, but you can do that even after the walking time. My rolls have become relatively high if you want them to be flatter, you have to press them a little bit more flatter than I did.
  • Now you take half the egg, which you should pack in the refrigerator before. Add 1 tablespoon of water and 1 tablespoon of milk and stir the ingredients.
  • The mixture should not be too cold, as the rolls otherwise get a cold shock and collapse. So the mixture better prepares 15 minutes before. Then you put the buns in it and scatter something sesame over it.
  • Preheat oven. The Burger Buns are heated at 180°C circulating air or 200 °C High/lower heat for 15 – 20 minutes in the oven. They are finished when they are golden brown.
