Arbi is crafted as a coated colocasia recipe made with gram flour. The vegetable is boiled and then coated with gram flour and other species. The recipe can be made quickly with easily available ingredients at home. Also, you can add some water to make gravy for this recipe.
Ingredients
- 250 gms of arbi [colocasia root]
- 2-3 tablespoon musturd oil
- 2-3 tablespoon coriander
- a pinch of asafotedia
- 1/2 tablespoon ajwain
- 1 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon fennel seed
- 1/4 teaspoon garam masala
- 1/4 teaspoon red chilli powder
- salt to taste
- 1 dry red chilly
- 1/4 teaspoon dry mango powder
- 1 tablespoon gram flour
Directions
1Wash and dry the vegetable before using them. Now, add the arbi and add 1 cup of water to the cooker. Close the lid and boil arbi for 5-10 minutes. Let the it cook on pressure and open the cooker only after the pressure is released. Leave arbi in a bowl for few seconds to cool. Now, peel it and cut the arbi into two parts. Remember, to slit it into length and not width.
2Now, heat oil into a pan and add ajwain, a pinch of asefotida, coriander powder, chopped green chilli, 1 tabespoon gram flour and turmeric into the pan.Stir all the ingredients well.
3Now, add fennel powder, salt and parted colocosia root to the pan. Coat the arbi well with all the ingredients. Now, add red chilli powder, garam masala and dry mango powder to the pan and mix well.
4Turn gas to low heat and keep tossing the colocosia root into the pan. Repeat this processs for 5-8 minutes. Switch off the gas and add some chopped coriander.
5Transfer the recipe, into a serving plate and garnish with some spring onion and fresh coriander leaves.
