Today we are going to make a keto dessert with flax seeds. This dessert is going to be a low-carb chocolate dessert. Personally, I do not like the taste of flax seeds when eaten raw. However, I like to innovate and make recipes with healthy ingredients. This is a fun way to have healthy foods with better taste. If you have kids who are reluctant to eat flax seeds, you can always make this keto dessert as a way to give them healthy food with chocolate. Since this dessert is low carb, it can be eaten by fitness freaks and weight watchers.

  • ¼ cup oil
  • ¼ cup cocoa powder
  • 1 tsp instant coffee powder
  • 1 cup flax seeds
  • 2 tbsp flour
  • 1 tsp baking powder
  • 1 ½ tsp baking soda
  • ¼ tsp salt
  • 4 eggs
  • 1 cup sugar
  • ½ tsp vanilla extract
  • 1 cup almond milk
  • 1 cup water

Instructions

  • For this recipe, you will be needing an oven. Firstly, preheat the oven to 350F.
  • Then, take some butter or oil and grease the baking pan with it.
  • Later, in a bowl, whisk the cocoa powder and instant coffee powder together.
  • Take an other small bowl and mix the flax seeds, baking soda, flour, baking powder and also salt. Mix them together thoroughly.
  • In an other bowl, take the eggs, and beat them thoroughly. Then add some vanilla extract and sugar. Mix well.
  • Now, slowly add the cocoa powder mixture to the eggs and combine well. Use the half and loft method to combine the batter. Make sure that there are no lumps and mixture is mixed well.
  • Next, Add the flax seed mixture into the eggs as well and beat it thoroughly.
  • Later, add some almond milk and mix the mixture thoroughly.
  • Let the batter rest for 5 minutes.
  • Add the mixture into the baking tray and transfer it into the oven.
  • Bake the cake for 25-30 minutes.
  • Let the cake cool before serving. Refrigerate for better taste.
  • For icing, you can sprinkle sugar dust on top of the cake.

In the recipe mentioned above, I have used regular oil and milk. However, If you are looking for a keto alternative for the recipe, You can switch the oil with coconut oil, flour with coconut flour and use almond milk or soy milk. For weight watchers, if you are looking for a low-carb alternative, add a sugar substitute instead of sugar. You can replace sugar weight to weight with the sugar substitute and follow the recipe as it is. However, if you are not constrained on having a low-calorie meal, but looking for a keto meal, you can simply use powdered sugar. You can also add chocolate chunks into the baking pan with the batter if you are looking to make this recipe more fun. I personally prefer having gooey chocolate in between my cake. It gives the cake an amazing texture and feel.

You can also use frosting if you are interested. I personally like to frost my cakes instead of icing them with sugar dust. If you do not have the time to make a frosting, there is a small hack for you. You can use cold canned whipped cream instead. I would like to top my cake with a whipped cream swirl and some fresh fruits. This cake also makes an amazing low carb keto dessert for gatherings and parties as well.
