Paneer tikka masala has always been a comfortable main course for all Indians. As a matter of fact, there are so many variations to make this luscious red gravy. But today I am going to show you how to make this mouth-watering paneer tikka masala – the restaurant style. Cottage cheese or what we call paneer in India is a dairy product made from cow or buffalo milk. If you prefer the vegan option, you can always opt to replace the cottage cheese with other items, for example – tofu. Although, I personally prefer cottage cheese instead of tofu. The red gravy used in this recipe is surprisingly versatile. It can be used to make chicken tikka masala, mixed vegetable curry and make other main course curries. I remember posting a yellow gravy recipe – Paneer butter masala. Even though both the recipes sound the same, they are quite different in both taste and flavour.

How to make rumali roti with paneer tikka masala at home?

Paneer tikka masala is an easy main course dish to make and does not involve a huge process. However, the paneer tikka masala made at a restaurant uses a tandoor to grill the cottage cheese. The red gravy can be made at home and instead of using the tandoor, we will be grilling the paneer tikka on the tawa.

Rumali roti is an Indian flat bread. To note, rumali roti is a really thin bread usually eaten with gravy. Moreover, It takes huge skill to master how to make this type of roti. However, restaurant-style rumali roti is made on a huge wok turned upside down. Understandably If you do not have a wok at home, do not fret. I am going to show you how to make restaurant-style rumali roti using a big kadai. We can also use a pan or a tawa to make this roti and trust me, it will be to be the same as making one on a wok or kadai. Not to mention, It goes really good with our main course curry – paneer tikka masala.

Ingredients

Ingredients for making paneer tikka marination

  • 500 gms Cottage Cheese (Cut into medium sized cubes)
  • 1 tbsp Chilli Powder
  • ½ tbsp Turmeric Powder
  • ½ tbsp Coriander Powder
  • 1 tbsp Garam Masala
  • 1 cup Curd
  • 1 tbsp Kasuri Methi
  • ½ cup basen or chickpea flour
  • 4 tsp Lemon Juice
  • 1 Capsicum (Cut to cubes)
  • 1 Onion (Cut to cubes)
  • Salt to taste
  • Oil
  • 1 tbsp Ginger Garlic Paste

Ingredients for making red gravy

  • 2 Bay Leaves
  • 1 Cinnamon
  • 3 Cloves
  • 2 Cardamom
  • 1 Onion (finely chopped)
  • ½ tbsp Turmeric
  • 1 tbsp Chilli Powder
  • Salt to taste
  • ½ tsp Coriander Powder
  • ½ tsp Cumin Powder
  • 1 cup Tomato Puree
  • 1 tsp Garam Masala
  • 2 tsp Kasuri Methi
  • 1 tbsp Cream
  • Oil

Ingredients for making rumali roti

  • 3 cups All Purpose Flour
  • 1 cup atta
  • salt to taste
  • 2 tbsp oil
  • Water as required

Instructions

How to make paneer tikka masala

  • firstly, take a bowl and add ¾ cup curd, ¼ tsp turmeric, ¾ tsp chilli powder, ¼ tsp cumin powder, ½ tsp coriander powder, ¼ tsp pepper powder and ½ tsp garam masala,  ½ tsp salt, 1 tsp kasuri methi, 2 tbsp besan and 2 tsp oil.
  • Further, add 2 tsp lemon juice and 1 tbsp ginger garlic paste. mix well.
  • Now add capsicum, onion and cottage cheese.
  • Mix everything well and marinate for at least 30 minutes. More the better.
  • After 1 hour, insert into skewer and grill until golden brown using a tawa.

How to make red gravy

  • Firstly, take a kadai and heat 2 tbsp oil. add 1 bay leaf, cinnamon, 2 pods cardamom, 3 cloves and 1 tsp cumin. stir until the spices turn aromatic.
  • Next, Add onion and 1 tsp ginger garlic paste. saute until the onions turn golden brown.
  • Now add turmeric, chilli powder, ½ tsp coriander powder, ½ tsp cumin powder and salt to taste.
  • Cook until you can smell the spices
  • Next, add the tomato puree.
  • Let the oil separate and then add some water to adjust the consistency.
  • Now, add the Cottage cheese into the red gravy.
  • Stir for 7-8 minutes and then add garam masala and kauri methi.
  • Mix it well and then top it off with cream.

How to make rumali roti

  • First, mix maida, atta, salt, oil and water together.
  • Knead it to make a soft dough. Make sure to not over knead the dough for this recipe, just make sure it comes together and then cover it with a damp cloth
  • Now, let it rest for at least 30 minutes.
  • Now, divide the dough into 6 equal sized balls.
  • Now, Heat up a tawa or a kadai facing downwards.
  • Roll the rumali roti using a rolling-in. Make sure that the roti is thin.
  • now, place the roti on the upside down tawa and let it bake until it is brown.
  • Enjoy the hot rumali roti with delicious cottage cheese in red gravy.
