Vegan French Toast
Ingredients
- 1 cup unsweetened soy milk or almond milk
- ¼ cup corn starch
- 1 tsp powdered flax seeds
- ½ tsp baking powder
- 1 tsp ground cinnamon
- 2 tbsp maple syrup
- 1 tsp vanilla essence
- 6 slices of bread (thickly cut)
- 3-4 tbsp vegan butter
- banana, blueberries or strawberries (optional )
- powdered sugar (optional )
Instructions
- Firstly, in a bowl, whisk together the soy milk, cornstarch, ground flaxseeds, baking powder, cinnamon, maple syrup and also vanilla.
- Later , add a little bit of vegan butter/coconut oil to a pan over medium-high heat and melt. Whisk the batter again right before dipping bread.
- Dip each side of the bread in the batter and let soak, then add the bread to the pan and cook for 2-3 minutes on each side, until golden brown.
- Next, add more vegan butter to the pan as needed.
- Serve with maple syrup, powdered sugar and fresh fruit – optional.

Tips for making French toast
Vegan French toast is one of the breakfast recipes I made as a kid. This classic breakfast is fairly easy to make and does not need fancy equipment or special Ingredients. However, you need to keep a few things in mind to elevate the taste of the dish. Firstly, make sure you are making this fresh. Although I said that you can refrigerate the dish and reheat it before eating, I strongly suggest you make it fresh. French toast tends to become hard when you freeze or refrigerate it. When you reheat the French toast, it might get soggy and chewy to bite.
Keep in mind that you are cooking the toast on medium to low flame. If you try to cook the toast on high flame, it will burn and charr. When you cook the toast on a low flame, the sugar in the batter caramelises and gives out a really crisp golden outer later. However, if you cook it on high flame it might turn dark brown really quick and might give out a charred flavour and uneven caramelisation. If you want to make the original version of french toast and not the gluten-free one, you can replace the soy/almond milk with no-cream milk and corn starch with eggs.
I strongly suggest you top the French toast with maple syrup or honey. Maple syrup is fairly sweet. It can be found in your local departmental stores. If you do not have maple syrup you can always use honey. You can also top french toast with different varieties of toppings. One of my favourite non-traditional toppings to put is chocolate chips! this is a fun way to serve it to the kids. However, you can also use fresh fruits like strawberries, blueberries and bananas.
