Usal Pav | Spicy Misal Pav-Kolhapuri Style

Spicy Misal Pav recipe is very famous street food of usal(sprouts curry) topped with tomatoes,onions,farsan(fried savory mixtures)lime juice and pav(Indian bread) which is very famous in Mumbai.

Ingredients for Spicy Misal Pav

  • Mixed sprouts                                – 2 cups
  • Refined Oil                                      – 3 tablespoon
  • Mustard Seeds                               – 1/2 teaspoon
  • Curry Leaves                                  – 7-8 leaves
  • Turmeric Powder                        – 1/2 teaspoon
  • Asafoetida                                       – A pinch
  • Onions                                              – 2 chopped
  • Tomato                                             – 1 chopped
  • Kolhapuri Masala                         – 2 tablespoon
  • Crushed Garlic                               – 1 teaspoon
  • Jaggery                                              – 1 tablespoon
  • Tamrind paste                               – 1 teaspoon
  • Green Chillies                                 – 1/2 teaspoon
  • Red Chilli Powder                         – 1/2 teaspoon
  • Garam Masala Powder               – 1/2 teaspoon
  • Lemon                                               – garnish
  • Coriander leaves                           – garnish
  • Farsan                                               – garnish
  • Pav                                                      – serving

Spicy Misal Pav

Spicy Misal Pav is most famous dish of Maharashtra. Its a gravy made with sprouts curry and spice. Served with Pav (bread) and topped with salty snack. The perfect mixture of spices are found in this recipe.

Ingredients for Spicy Misal Pav

  • 2 cups Mixed Sprouts  
  • 3 tablespoons Refined Oil
  • ½ tablespoon mustard (seeds)
  • 7-8 pieces Curry Leaves
  • ½ tablespoon Turmeric Powder (Haldi)
  • 1 pinch Asafoetida (Hing)
  • 2 medium Onion (chopped)
  • 1 medium Tomato (chopped)
  • 2 tablespoons Kolhapuri Masala
  • 1 tablespoon Garlic (Crushed)
  • 1 tablespoons Jaggery
  • 1 teaspoon Tamarind (paste)
  • ½ teaspoon Green Chilli (chopped)
  • ½ teaspoon Dry Chilli (Lal Mirch) (powder)
  • ½ teaspoon Garam Masala (powder)
  • Lemon (for garnish)
  • Coriander leaves (finely chopped)
  • Farsan (salty snacks)
  • 4 pieces Pav (bread)

Instructions

Directions for Usal

  • First of all boil sprouts in a pan for 10 minutes.
  • Add a pinch of salt of enhance  the flavor. Strain and keep the boiled sprouts aside.
  • Heat oil in a pan and add mustard seeds and let it crackle. After a second add curry leaves, chopped green chilies and a pinch of asafoetida to the pan.
  • Stir fry it for 2 minutes. Finally add onions into the pan and fry till the onions turn transparent and cooked.
  • In addition turmeric powder and fry onions for probably a second.
  • Add boiled sports and stir for few seconds.Now also add red chilli powder and salt to taste.
  • Add one cup of water and cover the pan with lid. Let the sprouts cook almost five minutes.
  • Switch off the gas also add tamarind paste and mix.
  • Transfer the sprout curry into a serving bowl and finally add farsan [salty snack/namkeen mixture] to the curry.
  • Furthermore, garnish with chopped tomatoes, green chillies and chopped onions.
  • Add 1 tablespoon of lemon juice and fresh chopped coriander in the end.
  • Finally Serve hot Missal curry with pav and onion rings.

How To Make Spicy Misal Pav

  • First of all heat 4 tablespoon of oil into a pan and add two roughly chopped onions, one diced dry coconut, 1 tablespoon rock salt, 1 inch peeled and chopped ginger, 2 garlic pods.
  • Roast all the ingredients hence the onions gets soft and translucent.
  • Switch off the flame and take the mixture in a bowl and let it to cool.
  • Furthermore keep a pan to heat and add 4 tablespoon coriander seeds, 4 bay leafs, 4 tablespoon sesame seeds and stir fry.In addition 2 tablespoon of cumin seeds,1 tablespoon poppy seeds, 1/2 teaspoon of turmeric powder, 10-12 cloves and mix it well.
  • Now add 2 black cardamoms, 1 tablespoon stone flower, 2 pieces of mice and 2 tablespoon black pepper and mix it well.In addition 1/4 teaspoons of fenugreek seeds, 15-20 szechuan seeds and roast it.
  • Also add 100 grams of red chilies to the mixture and roast them almost two minutes.
  • Grind  the onion, coconut mixture in addition a pinch of asafoetida while grinding.
  • In addition dry roasted ingredients to this and grind again as a result prepare smooth paste.
  • Finally Kolhapuri masala is ready to use.
