    Instructions

    Preparing the Rice

    • Rinse the basmati rice in cold water and soak it in water for 30 minutes. Drain the water and set the rice aside.

    Preparing the Vegetables

    • In a large pot, heat 1 tbsp of oil over medium heat. Add the cinnamon stick, cardamom pods, cloves, bay leaf, and cumin seeds. Fry them for a few seconds until they release their aroma.
    • Add the soaked basmati rice to the pot and stir well. Add the soaked rice, 1 piece cardamom, cloves, half cinnamon stick and 1 tsp of salt. Bring the water to a boil, then reduce the heat to low and cover the pot. Cook the rice for 15-20 minutes or until the water is fully absorbed and the rice is 90% done.

    • In a separate pan, heat 1 tbsp of oil over medium heat. Add the sliced onions and sauté until they turn golden brown. Add the ginger-garlic paste and chopped green chili and sauté for another minute.
    • Add the mixed vegetables and chopped tomato to the pan and stir well. Add the biryani masala and salt to taste. Cook the vegetables for 5-7 minutes or until they are tender but still slightly crunchy.
