Pav Bhaji is very famous street food of India. Specially in Mumbai, people love to eat. It is mix vegetable like tomato, potato and some spices from Indian. Pav is soft bread with butter served along with bhaji. It is known to be healthiest snack as comes with many vegetables.
How to get red color in Pav Bhaji
Well is simple, I never prefer adding artificial color to food. I add small piece of boiled beetroot along with its stock for good color.

Equipment Required
Ingredients
Ingredients to make Bhaji of Pav Bhaji
- 2 teaspoon Pav Bhaji Masala (refer pav bhaji masala recipe )
- 1 tablespoon Vegetable Oil
- 2 inch Ginger
- 1 teaspoon garlic (finely chopped)
- 1 teaspoon Cumin Seed
- 3 medium size Potatoes (or 250 grams potatoes,boiled, peeled and chopped)
- 2 medium size Tomatoes (finely chopped)
- 2 medium size Onion (230 grams, finely chopped.)
- 1 cup Green Peas (boiled)
- 1 small size cauliflower (215 grams, boiled)
- 1 cup chopped Carrot (boiled or grated)
- ½ teaspoon Dry Chilli (Lal Mirch)
- ¼ teaspoon Turmeric Powder (Haldi)
- 1 teaspoon Lemon Juice
- 2 teaspoon Coriander leaves (finely chopped)
- Salt as per tasted
- 1 teaspoon aamchur powder (dry mango powder)
Ingredients for Pav of Pav Bhaji
- 8 units Pav (bread for serving)
- 1 tablespoon Butter (unsalted) (vegan butter can aso be used )
Instructions
How to Make Pav Bhaji
- Take all the vegetables , wash them properly .
- Boil the vegetables like potato, cauliflower and carrot with pinch of salt.
- After its cooked, allow it to cool down by itself.Tip: Collect the water from boiled vegetable (Vegetable stock ) for further cooking.
How to Make delicious Pav bhaji
- Heat pan on medium flame, add 2-3 tablespoon of butter/oil to it.
- As soon as butter melts, add 1 teaspoon of cumin seed and let them sizzle until colour changes.
- Then add finely chopped onion , ginger and garlic saute until onion turns translucent.
- Add tomato, boiled french beans, green peas and pinch of salt. Allow to cook untill tomato turns soft.
- Now add spices such as 1½ turmeric, ½red chilli powder, dry mango powder and 1 teaspoon pav bhaji masala. Refer pav bhaji masala recipe for home made spices.
- Then season with salt as per taste.
- Add potato and other boiled vegetable, and mix. Using masher mash the veggies until they are mixed with spices.
- Add ¾ cup of water and keep on stirring occasionally, let the bhaji simmer for 7-10 min.
- Bhaji should have paste like consistency neither too dry nor very thin, add water if needed.
- Stir often to prohibit bhaji from sticking on pan, check the taste if required then add salt /pepper/Pav Bhaji Masala.
- Simultaneously, you can fry pav in butter by slicing it in middle.
Frying Pav For Pav Bhaji
- Take shallow pan and add butter, keep the flame to low.
- While butter melts add Pav Bhaji Masala to it, it's optional you can skip it.
- Cut the pav horizontally into halves and shallow fry from both the sides until turns light brown, hardly takes few seconds.
Sides for Pav Bhaji
- Mostly, Pav Bhaji is served with chopped onion, tomato and lemon.
- Firstly, take chopped onion and tomato.
- Add butter to pan and allow it to melt. Once butter gets melt add Pav Bhaji Masala and fry the chopped onion and tomato. (Optional)
- Now transfer the above mixture to plate.
- Garnish it with lemon slice and chopped coriander leaves.
Serving Pav Bhaji
- Take a bowl or plate for serving bhaji, top it up with butter slices and some chopped coriander leaves.
- Lemon juice can be added to bhaji if you like it more tangy. Extra cheese can be added for cheese lovers.
- Take pavs and sides in other plate & serve it hot.
Notes
- Be careful while using pressure cooker, don’t open it immediately after cooking allow it to get cool for 10 mins, you can check by lifting whistle of cooker by spoon.
- Pav Bhaji could also be made without smashing known as Khada Pav Bhaji, it restores the fiber of vegetables.
- Check the boiled vegetables with toothpick, whether properly cooked or not.
- To give proper red color to bhaji add beetroot after boiling, instead of artificial food color.
- Can be topped with to get rich taste.
- Add chopped onion & tomato with sliced lemon as side.
- One can also lightly fry onion and tomato in butter and pav bhaji to add more taste.
- For Vegan, instead of normal butter vegan can also be used to get same taste.
- Other veggies like boiled broccoli, sweet corn, capsicum could be added to get more nutrient value.
How to Make Pav Bhaji
- For making delicious pav bhaji, firstly take all the vegetables listed in ingredients, wash them properly and cut into small pieces.
- Furthermore, boil the vegetables like potato, cauliflower and carrot with pinch of salt.
- After its cooked, allow it to cool down by itself.
- Tip: Collect the water from boiled vegetable (Vegetable stock ) for further cooking.
- Also, if you are cooking with pressure cooker than it will take 3 whistles to get boiled properly.
Making Bhaji For Pav Bhaji
