These Jackfruit sandwiches give you am an amazing replacement for the meaty sandwiches because of its meaty texture and flavour which is similar to meat when it cooks. The barbeque seasoning and sauce gives a unique taste with vegan mayo and slaw inside the bun.
Two Cans Of – Green Jackfruit
Half Medium – Red Onion(thinly sliced)
One Teaspoon Of Both – Garlic And Ginger(minced)
Salt As Required
Two To Three Tablespoons – Barbeque Seasoning
Three-Fourth – Barbeque Sauce
Three Cups – Red Cabbage, Carrot, Brussel sprouts, Baby Kale Mix(shredded Slaw)
One-Fourth Cup – Vegan Mayo
One Tablespoon – Apple Cider Vinegar
Half Tablespoon – Sugar
Freshly Ground Black Pepper
Drain the jackfruit. Place in a thick kitchen towel, fold and squeeze out as much liquid as possible. slice the rest of the jackfruit using a knife. Remove hard seeds if any.
Add the jackfruit to a large bowl with sliced onion, garlic, and ginger. Add barbeque seasoning and sugar mixture, and salt and mix well.
Now add half to two-thirds cup barbeque sauce and mix. Add two tablespoons vegetable broth to thin the barbeque sauce and mix in. Spread the mixture in a large baking dish.
Bake at 400 degrees F for thirty minutes. Shred some of the larger pieces by pressing with a spatula. Taste and adjust salt, sweet, spice at this point. Add some more salt, sugar, and cayenne for heat if needed and mix in and move the jackfruit around.
Spread well again and continue to bake for another fifteen to twenty-five minutes.
Prepare your buns tacos and slaw. Mix everything under slaw. Taste and adjust flavour. Chill for fifteen minutes and use.
Mix in two to four tablespoons barbeque sauce into the baked jackfruit and assemble the sandwiches with generous layers of jackfruit, more barbeque sauce, slaw.
