Tofu Green Curry is a great alternative for vegetarian packed with protein and flavorful green curry. Deliciousy, fully nutritious contains tofu, vegetables, and green curry to make this recipe tastier and healthier. Hope you like this recipe as you did like my previous recipe Black Beans Soup.
Ingredients:-
Two – Medium Onion(chopped)
One-Fourth Teaspoon – Kosher Salt
One Teaspoon – Olive Oil
Five Teaspoons – Green Curry Paste(recipe will be given below the main recipe)
Two Cloves – Garlic(minced)
One-Fourth Teaspoon – Cumin
500 Grams – Cauliflower
One Cup – Coconut Milk
150 Grams – Baby Spinach(chopped)
Two Pieces -Tofu(roasted and diced)
Handful Of Fresh Coriander Leaves
Line Wedge
Sliced Cucumber
Directions:-
In a saucepan heat olive oil over medium flame, add chopped onions and cook with kosher salt for three minutes, keep stirring.
Add green curry paste, minced garlic cloves,and cumin. Cook while stirring for one minutes.
Cover the saucepan with cauliflower and coconut milk, simmer for ten minutes.
Stir in baby spinach, cook for two more minutes. Stir in roasted and diced tofu and chopped coriander leaves.
Transfer to a bowl: Top with lime wedge and serve with sliced cucumber toss with lime juice.
Tofu green curry is ready to served with steamed rice.
GREEN CURRY PASTE
Ingredients:-
Two Stalks – Lemongrass(outer layers removed)
250 Grams – Green Chillies(deseeded)
One Stalk – Green Onion
Four Cloves – Garlic
One To Three Inch Piece Of Ginger(thinly sliced)
One Teaspoon – Dried Turmeric
One Kaffir Lime Leaf(very finely chopped)
One Teaspoon – Coriander, Cumin(both Ggounded
One Teaspoon Each Of – Kosher Salt , And Sugar
How To Make
Take a food processor finely grate bottom thirs of lemon grass into it.
Add green chillies, green onion, garlic, ginger, turmeric, kaffir lime leaf, coriander , cumin, salt, and sugar.
Blend the ingredients very well in a food processor until smooth.
Your green curry paste is ready.
