Take the dry chillies and cut off the top and add it to hot water. Let it rest in the water for 20 minutes.
After 20 minutes, take the chillies out and of the water and blend them into a smooth paste.
Now, take a pan and add some oil.
Add chopped garlic and 2 tbsp ginger and let it fry for a minute for furthermore, add the red chilli paste and saute for 2 minutes until chilli gets cooked well.
Next, add some water and let it simmer until the oil floats on top.
Furthermore add in ½ tsp pepper, 2 tbsp vinegar, 2 tbsp soy sauce, 2 tbsp tomato sauce, 1 tbsp sugar and salt to taste.
The Schezwan sauce is ready! Serve the hot and steaming Dim Sum with chicken filling and this delicious sauce to enjoy!
Top the Dim Sum with spring onion when serving.
