Ingredients

  • 500 gms baby baked potatoes
  • 2 tbsp all purpose flour
  • 4 tsp corn flour
  • salt (to taste )
  • pepper (to taste)
  • 4-5 tbsp Vegan mayonnaise
  • 1 onion (chopped)
  • Vegan milk

For the spice mix

  • 1 tsp paprika
  • salt (per taste )
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp cracked black pepper

Instructions

For making the sauce

  • Firstly, mix together the mayonnaise, and all the spices mentioned in the cajun spice mix ingredients section in a bowl.
  • Later you can add 1-2 tablespoons of vegan milk if the dressing is too thick.
  • Next, clean the potatoes properly. later boil the potatoes with the skin until they are 90% done.
  • Then take a heavy weight and squish the potatoes a little.
  • Later sprinkle some cornflour on the potatoes and mix until the potatoes are lightly coated on both sides.
  • In a shallow pan, heat some oil on a medium-high flame, shallow fry the coated baby potatoes till they turn a crispy and golden brown color. You can also deep fry.
  • Lastly, lay the crispy potatoes on a serving plate. Add the dressing on each potato along with finely chopped onions & coriander.
  • Enjoy the mouth watering appetisers.
