Ingredients

Badam Sharbat

  • 250 grams Badam or Almonds
  • 7 ½ cups water
  • 1 pinch saffron
  • 2 tsps cardamom powder
  • 3 cups sugar
  • Milk (as per requirement )

Jal Jeera

  • ½ cup mint leaves
  • ½ cup cilantro leaves
  • ½ inch ginger
  • 2 tsp lime juice
  • ½ tsp roasted cumin powder
  • ¼ tsp asafetida
  • 2 tsp black salt
  • ¼ tsp regular salt
  • ¼ tsp black pepper
  • 1 tsp granulated sugar
  • 2 tsp dry mango powder
  • 1 tsp tamarind paste
  • 4 cups chilled water

Watermelon and Ginger cooler

  • 4 cups watermelon
  • 2 tsp ginger
  • ¼ cup lemon juice
  • 2 tbsp sugar
  • ½ cups ice cubes

Cucumber and mint cooler

  • 1-2 cucumber pieces
  • 3 tbsp sugar
  • 6-8 mint leaves
  • 3 tbsps lime juice
  • 1 tsp black salt
  • 3 cups chilled water
  • ice cubes (as needed )
  • cucumber and mint leaves (for garnish )

Instructions

Badam Sharbat

  • Firstly, Rinse almonds with water and soak them in 3 cups of cold water for 8-10 hours.
  • Next, drain the water and rinse the almonds once again and remove their skin.
  • Then, add the peeled almonds to a blender along with 1 and ½ cups of water and saffron strands and blend to make a smooth paste.
  • Next, add 6 cups of water and almond paste to a large pot and heat over medium heat, stirring frequently to prevent scorching at the bottom of the pan.
  • Once the mixture comes to a boil, reduce the heat to low and cook for 12-15 minutes, stirring frequently.
  • Next, add sugar and cook for another 5 minutes. Add cardamom powder and mix well.
  • Then, remove the pan from the heat. The badam sharbat concentrate is ready.
  • Now, let it cool completely and then store in an airtight container and refrigerate for up to 7 days or freeze for up to 6 months.
  • To make the sharbat, add ½ cup of concentrate to a tall glass. Top the glass with chilled milk, add a few ice cubes and stir well. Serve chilled.
  • In winter, you can add the concentrate to hot milk and sip it hot.

Jaljeera

  • Firstly, add mint leaves, cilantro (coriander), ginger (chopped), and ½ cup water to a blender.
  • Next, blend until smooth.
  • Then, tansfer the paste to a glass bowl.
  • Next, stir in lime juice, roasted cumin powder, asafetida (hing), black salt, regular salt, ground black pepper, granulated sugar, dry mango powder, and tamarind paste.
  • Add the remaining 3 and ½ cups of water and stir well.
  • Check for salt, lemon juice, and tamarind paste, and add more if needed.
  • Next, refrigerate it for 3-4 hours for the flavors to come together.
  • Pour the Jaljeera into serving glasses. Add a few ice cubes and serve chilled.

Watermelon and Ginger cooler

  • Firstly, add all the ingredients in a blender and blend until smooth.
  • Next, pass the cooler through a sieve.
  • Pour in serving glasses.
  • Then, top with more ice.
  • Garnish with mint leaves and severe chilled.

Cucumber and mint cooler

  • Firstly, cut 3-4 very thin slices of a medium English cucumber for garnishing. I used a vegetable peeler and peeled along the length of the cucumber to get thin long slices. You can also use a sharp knife to cut the slices.,
  • Next, peel the remaining cucumber and chop into small pieces.
  • Then, add the chopped cucumber to a blender along with sugar, mint leaves, and 1 cup of water.
  • Blend until smooth.
  • Next, pass the mixture through a fine-mesh strainer. Use a spoon or a spatula to press the pulp and get the maximum liquid out of it. Discard the pulp.
  • Stir in 3 tablespoon freshly squeezed lime juice, 1 teaspoon black salt, and the remaining 2 cups of water with the cucumber juice.
  • Lastly, add one or two thin slices of cucumber and 3-4 ice cubes to each glass. Pour the drink into the glasses. Garnish the cucumber cooler with a few lime rings and mint leaves. Serve immediately.
