Ingredients

  • 1 cup unsweetened soy milk or almond milk
  • ¼ cup corn starch
  • 1 tsp powdered flax seeds
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence
  • 6 slices of bread (thickly cut)
  • 3-4 tbsp vegan butter
  • banana, blueberries or strawberries (optional )
  • powdered sugar (optional )

Instructions

  • Firstly, in a bowl, whisk together the soy milk, cornstarch, ground flaxseeds, baking powder, cinnamon, maple syrup and also vanilla.
  • Later , add a little bit of vegan butter/coconut oil to a pan over medium-high heat and melt. Whisk the batter again right before dipping bread.
  • Dip each side of the bread in the batter and let soak, then add the bread to the pan and cook for 2-3 minutes on each side, until golden brown.
  • Next, add more vegan butter to the pan as needed.
  • Serve with maple syrup, powdered sugar and fresh fruit - optional.
