Firstly, in a bowl, whisk together the soy milk, cornstarch, ground flaxseeds, baking powder, cinnamon, maple syrup and also vanilla.
Later , add a little bit of vegan butter/coconut oil to a pan over medium-high heat and melt. Whisk the batter again right before dipping bread.
Dip each side of the bread in the batter and let soak, then add the bread to the pan and cook for 2-3 minutes on each side, until golden brown.
Next, add more vegan butter to the pan as needed.
Serve with maple syrup, powdered sugar and fresh fruit - optional.
